Ingredients

  • 1 pound dried white beans
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound cooked ham, diced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste

Directions

  1. Rinse the dried white beans and soak them overnight in water. Drain and rinse the beans before using.
  2. Turn on the Instant Pot and select the Saute function. Heat a tablespoon of oil and saute the onion, carrots, celery, and garlic until they start to soften.
  3. Add the diced ham, soaked white beans, chicken broth, bay leaf, dried thyme, dried rosemary, salt, and black pepper to the Instant Pot.
  4. Close the lid and set the pressure release valve to the Sealing position.
  5. Select the Manual/Pressure Cook function and set the timer for 25 minutes on high pressure.
  6. Once the cooking time is up, allow for a natural pressure release for 10 minutes, then carefully move the pressure release valve to the Venting position to release any remaining steam.
  7. Remove the bay leaf and use an immersion blender to partially blend the soup to achieve a thicker consistency.
  8. Taste and adjust the seasoning if needed.
  9. Serve hot with crusty bread and enjoy!
