Ingredients
- 1 pound dried white beans
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 pound cooked ham, diced
- 6 cups chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
Directions
- Rinse the dried white beans and soak them overnight in water. Drain and rinse the beans before using.
- Turn on the Instant Pot and select the Saute function. Heat a tablespoon of oil and saute the onion, carrots, celery, and garlic until they start to soften.
- Add the diced ham, soaked white beans, chicken broth, bay leaf, dried thyme, dried rosemary, salt, and black pepper to the Instant Pot.
- Close the lid and set the pressure release valve to the Sealing position.
- Select the Manual/Pressure Cook function and set the timer for 25 minutes on high pressure.
- Once the cooking time is up, allow for a natural pressure release for 10 minutes, then carefully move the pressure release valve to the Venting position to release any remaining steam.
- Remove the bay leaf and use an immersion blender to partially blend the soup to achieve a thicker consistency.
- Taste and adjust the seasoning if needed.
