Ingredients

  • 1 pound ground turkey
  • 1 medium zucchini, grated and squeezed to remove excess moisture
  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil

  • 1 large egg, beaten
  • 1 jar roasted red peppers, drained

Directions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, grated zucchini, Parmesan cheese, bread crumbs, parsley, minced garlic, dried oregano, dried basil, salt, black pepper, red pepper flakes (if using), and beaten egg. Mix everything together until well combined.
  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
