Ingredients

  • 1 cup semolina (sooji)
  • 1 tablespoon ghee or oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • 8-10 curry leaves
  • 2 green chilies, finely chopped
  • 1 onion, finely chopped
  • 1/2 cup mixed vegetables (carrots, peas, beans), finely chopped
  • 2 cups water
  • Salt to taste
  • 1 tablespoon fresh cilantro, finely chopped
  • 1 tablespoon lemon juice

Directions

  1. Heat ghee or oil in a pan or kadai over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add cumin seeds, asafoetida, curry leaves, and green chilies. Stir for a few seconds.
  4. Add chopped onions and sauté until they turn translucent.
  5. Add mixed vegetables and sauté for 2-3 minutes.
  6. Add semolina (sooji) and roast it on low heat for about 5 minutes or until it turns aromatic and changes color slightly.
  7. In a separate pan, boil water and add it gradually to the roasted semolina while stirring continuously to avoid lumps.
  8. Add salt to taste and mix well. Cover the pan and let it cook on low heat for about 5-7 minutes until the semolina is cooked and absorbs all the water.
  9. Finally, add fresh cilantro and lemon juice. Mix well.
  10. Serve Sooji Upma hot as a breakfast dish or as a snack with tea.
