Ingredients
- 2 cups riced broccoli
- 1/2 cup almond flour
- 1/4 cup grated cheese
- 1/4 cup chopped onions
- 1/4 cup chopped bell peppers
- 1/4 cup chopped cilantro
- 2 eggs
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2-3 tbsp olive oil for frying
Directions
- In a large bowl, mix together the riced broccoli, almond flour, grated cheese, onions, bell peppers, cilantro, eggs, garlic powder, paprika, salt, and pepper.
- Form the mixture into small croquettes and place them on a baking sheet.
- Heat olive oil in a skillet over medium heat.
- Fry the croquettes in batches until they are golden brown on all sides.
- Remove from the skillet and place them on a paper towel to drain excess oil.
