Directions

  1. Heat a large skillet or wok over medium heat. Add 1 tablespoon of vegetable oil.
  2. Add the diced chicken to the skillet and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant.
  4. Push the onion and garlic to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until cooked.
  5. Combine the scrambled eggs with the onion and garlic mixture.

  7. Add the cooked rice to the skillet. Stir to combine all the ingredients evenly.
  8. In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil.

  10. Add the cooked chicken back to the skillet. Stir-fry everything together for an additional 2-3 minutes.
