These Caribbean jerk chicken quesadillas are a fusion of Caribbean and Mexican flavors, with a spicy kick from the jerk seasoning. Perfect for a quick and easy weeknight dinner or a fun appetizer for a party.

Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tbsp Caribbean jerk seasoning
  • 1 red bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh cilantro
  • 4 large flour tortillas
  • 2 tbsp olive oil

Directions

  1. In a bowl, toss the diced chicken with the Caribbean jerk seasoning until well coated.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper and onion, and cook until softened, about 5 minutes.
  4. To assemble the quesadillas, lay out a tortilla and sprinkle a quarter of the mozzarella cheese over half of the tortilla. Top with a quarter of the cooked chicken, bell pepper, onion, and cilantro. Fold the tortilla in half.
  5. Heat a clean skillet over medium heat. Place the assembled quesadilla in the skillet and cook for 2-3 minutes per side, until the tortilla is crispy and golden brown and the cheese is melted.
  6. Repeat with the remaining tortillas and filling.
  7. Cut the quesadillas into wedges and serve hot with salsa, sour cream, and additional cilantro for garnish.
