These Caribbean jerk chicken quesadillas are a fusion of Caribbean and Mexican flavors, with a spicy kick from the jerk seasoning. Perfect for a quick and easy weeknight dinner or a fun appetizer for a party.
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 2 tbsp Caribbean jerk seasoning
- 1 red bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh cilantro
- 4 large flour tortillas
- 2 tbsp olive oil
Directions
- In a bowl, toss the diced chicken with the Caribbean jerk seasoning until well coated.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper and onion, and cook until softened, about 5 minutes.
- To assemble the quesadillas, lay out a tortilla and sprinkle a quarter of the mozzarella cheese over half of the tortilla. Top with a quarter of the cooked chicken, bell pepper, onion, and cilantro. Fold the tortilla in half.
- Heat a clean skillet over medium heat. Place the assembled quesadilla in the skillet and cook for 2-3 minutes per side, until the tortilla is crispy and golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut the quesadillas into wedges and serve hot with salsa, sour cream, and additional cilantro for garnish.
