Ingredients

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1 cup chopped scallions
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil

Directions

  1. In a mixing bowl, combine the flour and salt. Gradually add the boiling water while stirring with a fork until the dough comes together.
  2. Transfer the dough onto a lightly floured surface and knead for about 5 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.
  3. Divide the dough into 4 equal portions. Take one portion and roll it out into a thin, rectangular shape.
  4. Brush the surface of the rolled-out dough with vegetable oil. Sprinkle a quarter of the chopped scallions evenly over the oiled surface.
  5. Starting from the short end, tightly roll up the dough into a cylinder.
  6. Take the rolled-up dough and coil it into a spiral shape. Flatten the spiral with your hand and roll it out into a pancake about 1/4 inch thick.
  7. Repeat the process with the remaining dough portions and scallions.
  8. Heat a non-stick skillet over medium heat and add a teaspoon of vegetable oil.
  9. Place one pancake in the skillet and cook for about 2-3 minutes on each side until golden brown and crispy.
  10. Remove from the skillet and repeat with the remaining pancakes.
  11. In a small bowl, mix together the soy sauce and sesame oil to create a dipping sauce.
