Ingredients
- Pork chops: 4 boneless pork chops, cut 2 inches thick
- Stuffing: 1 cup breadcrumbs, 1/4 cup finely chopped onions, 1/4 cup finely chopped mushrooms, 2 cloves garlic (minced), 2 tablespoons chopped fresh parsley, 1 tablespoon olive oil, 1/2 teaspoon dried thyme, salt and pepper to taste
- Sear: 2 tablespoons vegetable oil
- Glaze: 1/4 cup chicken broth, 2 tablespoons maple syrup
- Garnish: Fresh parsley leaves for garnish
Directions
- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a mixing bowl, combine breadcrumbs, onions, mushrooms, garlic, parsley, olive oil, thyme, salt, and pepper. Stir until well combined.
- Step 3: With a sharp knife, create a pocket in each pork chop by cutting horizontally into the meat, being careful not to cut through the other side.
- Step 4: Divide the stuffing mixture evenly among the pork chops, pressing it into the pockets. Use toothpicks if needed to secure the pockets closed.
- Step 5: Heat vegetable oil in an oven-safe skillet over medium-high heat. Sear the stuffed pork chops for 2-3 minutes on each side, until golden brown.
- Step 6: In a small bowl, whisk together chicken broth and maple syrup. Pour the glaze mixture over the pork chops.
- Step 7: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).
- Step 8: Remove the pork chops from the oven and loosely cover with foil. Let them rest for 5 minutes before serving.
- Step 9: Garnish with fresh parsley leaves and serve hot. Enjoy!
