Ingredients
- 1 cup white rice
- 1/2 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 1 medium onion, diced
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley, for garnish
Directions
- Turn on the Instant Pot and select the Saute function. Heat the olive oil and saute the diced onion until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the pot. Cook for another 3-4 minutes until the mushrooms have softened.
- Add the rice, orzo pasta, vegetable or chicken broth, dried thyme, dried parsley, salt, and black pepper to the pot. Stir well to combine.
- Close the lid of the Instant Pot and set the valve to the sealing position. Cook on high pressure for 7 minutes.
- Once the cooking time is complete, allow the pressure to naturally release for 5 minutes. Then, carefully quick release the remaining pressure.
- Remove the lid and stir in the butter and grated Parmesan cheese. Let the pilaf sit for a few minutes to allow the flavors to meld together.
