Ingredients

  • 250g digestive biscuits
  • 150g unsalted butter
  • 150g dark chocolate, chopped
  • 2 tablespoons golden syrup
  • 100g mixed dried fruits (e.g., raisins, cranberries)
  • 100g chopped nuts (e.g., almonds, walnuts, cashews)

Directions

  1. Line a square baking dish with parchment paper.
  2. Place the digestive biscuits in a plastic bag and crush them using a rolling pin, until you have a mix of both fine crumbs and larger chunks.
  3. In a saucepan, melt the butter, dark chocolate, and golden syrup over low heat, stirring until smooth and well combined.
  4. Remove the saucepan from heat and add the crushed biscuits, dried fruits, and chopped nuts. Stir well to combine.
  5. Transfer the mixture into the lined baking dish and press it down firmly using the back of a spoon.
  6. Place the dish in the refrigerator for at least 2 hours, or until the mixture is set.
  7. Once the tiffin is set, melt the remaining dark chocolate in a microwave or in a heatproof bowl over simmering water.
  8. Pour the melted chocolate over the top of the tiffin, spreading it evenly with a spatula.
