Ingredients

  • 2 live lobsters (1 1/2 to 2 pounds each)
  • 1 cup breadcrumbs
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup melted butter
  • Salt and pepper to taste
  • Lemon wedges for serving

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the live lobsters and cook for about 5 minutes. Remove from the water and let them cool slightly.
  3. Using a sharp knife, carefully split the lobsters in half lengthwise. Remove the claws and crack them slightly with the back of a knife.
  4. In a medium bowl, combine the breadcrumbs, minced garlic, chopped parsley, thyme leaves, melted butter, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  5. Place the lobster halves on a baking sheet, shell side down. Spoon the stuffing mixture onto each lobster half, pressing it down gently to fill the cavity.
  6. Bake the stuffed lobsters in the preheated oven for about 20-25 minutes, or until the stuffing is golden brown and the lobster meat is cooked through.
  7. Remove from the oven and let the lobsters rest for a few minutes before serving. Garnish with fresh parsley and lemon wedges.
  8. Serve the baked stuffed lobsters hot as a main course, accompanied by a side of melted butter and lemon wedges.
