Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour

- 1/4 cup strawberry jam
Directions
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough into three equal portions.
- Mix the cocoa powder into one portion of dough until well combined.
- Mix the strawberry jam into the second portion of dough until well combined.
- Leave the third portion plain.
- Roll out each portion of dough into a rectangle of the same size.
- Stack the three rectangles on top of each other, pressing down gently to adhere.
- Roll the stacked dough into a log, wrap in plastic wrap, and chill for at least 30 minutes.
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Slice the chilled dough log into 1/4-inch slices and place on the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are set and the cookies are lightly golden.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
