Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/3 cup Bailey's Irish Cream Liqueur
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup Bailey's Irish Cream Liqueur
  • Green sprinkles, for garnish

Directions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Stir in the Bailey's Irish Cream Liqueur until incorporated into the batter.
  7. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cupcakes cool in the pan for 5 minutes. Transfer to a wire rack to cool completely.
  10. For the frosting, beat the softened butter in a mixing bowl until creamy and smooth.
  11. Gradually add the powdered sugar, 1 cup at a time, beating well after each addition.
  12. Stir in the Bailey's Irish Cream Liqueur until the frosting is smooth and well combined.
  13. Once the cupcakes are completely cooled, frost them generously with the Bailey's frosting.
  14. Garnish with green sprinkles for a festive touch.
  15. Serve and enjoy!
