Ingredients

  • 4 large portobello mushrooms
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 pound fresh green beans, trimmed
  • 1/4 cup sliced almonds

Directions

  1. Preheat the oven to 375°F.
  2. Remove the stems from the portobello mushrooms and scrape out the gills to create a hollow center. Set aside.
