Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1/2 cup cold water
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/2 teaspoon almond extract
- 1/4 cup milk
- 1/2 cup sliced almonds
- 1/4 cup powdered sugar (for dusting)
Directions
- In a large mixing bowl, combine the all-purpose flour and salt. Cut in the chilled butter using a pastry cutter or your fingertips, until the mixture resembles coarse crumbs.
- Add the cold water gradually while mixing until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a separate bowl, mix the almond flour, granulated sugar, almond extract, and milk to form a thick paste.
- On a lightly floured surface, roll out the chilled dough into a 12x8-inch rectangle. Spread the almond paste evenly on top of the dough.
- Starting from the long side, roll up the dough tightly into a log. Cut the log into 12 equal pieces.
- Using a sharp knife, make three diagonal slits on each piece, without cutting all the way through. Gently shape each piece into a bear claw, by pulling the cut sections apart.
- Place the bear claws on the prepared baking sheet and sprinkle with sliced almonds. Bake for 20-25 minutes, until golden brown.
- Allow the bear claws to cool on a wire rack. Dust with powdered sugar before serving.
