Ingredients
2 lbs carrots, peeled and chopped
2 tablespoons olive oil
1 onion, diced
4 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon ground coriander
2 cups vegetable broth
1/2 cup heavy cream
1 teaspoon freshly ground black pepper
Salt to taste
Directions
Preheat oven to 400°F.
Toss the carrots with olive oil until evenly coated.
Spread the carrots on a baking sheet and roast in the oven for 25 minutes, or until tender.
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin and coriander and cook for another minute.
Add the roasted carrots, vegetable broth, and cream. Simmer for 15 minutes.
Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.
Stir in the black pepper and salt to taste.
