Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ⅓ cup melted butter
  • 1 cup caramel sauce
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 8 oz semisweet chocolate, melted
  • 1 cup heavy cream
  • ½ cup chocolate chips, for garnish

Directions

  1. Preheat the oven to 325°F (165°C).
  2. In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. Pour the caramel sauce over the crust, spreading it evenly.
  4. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Mix in the melted chocolate and heavy cream until well combined.
  5. Pour the cream cheese mixture over the caramel layer in the springform pan.
  6. Bake for 55-60 minutes or until the center is set and the top is slightly golden.
  7. Remove from the oven and let the cheesecake cool in the pan for 10 minutes. Run a knife around the edges to loosen the cheesecake, then remove the sides of the pan.
  8. Refrigerate the cheesecake for at least 4 hours or overnight to allow it to set.
  9. Before serving, garnish with chocolate chips. Slice and enjoy!
