Ingredients

  • 2 cups leftover risotto
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, cut into small cubes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup bread crumbs
  • 2 eggs, beaten

Directions

  1. In a large bowl, combine the leftover risotto, grated Parmesan cheese, chopped parsley, chopped basil, garlic powder, salt, and black pepper. Mix well to combine.
  2. Take a small portion of the risotto mixture and flatten it in your hand. Place a cube of mozzarella cheese in the center and shape the risotto mixture into a ball, ensuring the cheese is completely covered. Repeat with the remaining mixture and cheese cubes.
  3. In a shallow dish, place the bread crumbs. Dip each risotto ball into the beaten eggs, making sure it is well coated. Then roll it in the bread crumbs, pressing gently to adhere the crumbs to the surface.
  4. Preheat the air fryer to 400°F (200°C). Place the coated risotto balls in the air fryer basket in a single layer, without overcrowding.
  5. Cook the arancini in the air fryer for 15-20 minutes, or until they are golden brown and crispy. Flip them halfway through the cooking time to ensure even browning.
  6. Once the arancini are cooked, remove them from the air fryer and let them cool for a few minutes before serving. Serve with marinara sauce or aioli for dipping.
  7. Enjoy these delicious and healthier air fryer arancini as an appetizer or a main course!
