Ingredients

  • 9 lasagna noodles
  • 10 oz frozen chopped spinach, thawed and drained
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups milk
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp nutmeg

Directions

  1. Preheat oven to 350°F and grease a 9x13 inch baking dish.
  2. Cook lasagna noodles according to package instructions, then drain and set aside.
  3. In a saucepan, melt butter over medium heat. Add flour and cook for 1-2 minutes, stirring constantly.
  4. Slowly whisk in milk and bring to a simmer. Cook until sauce thickens, stirring occasionally.
  5. Stir in salt, pepper, and nutmeg. Remove from heat.
  6. Spread a thin layer of white sauce on the bottom of the baking dish.
  7. Layer 3 lasagna noodles, half of the spinach, 1/3 of the white sauce, and 1/3 of the mozzarella and Parmesan cheese.
  8. Repeat layers, ending with cheese on top.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
