Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (15-ounce) can pumpkin puree
  • 1 cup vegetable broth
  • 1/2 cup heavy cream

Directions

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the oregano, cumin, cinnamon, nutmeg, salt, and pepper and cook for 1 minute.
  4. Add the pumpkin puree and vegetable broth and stir to combine.
  5. Bring the mixture to a simmer and cook for 5 minutes.
  6. Stir in the heavy cream and simmer for 2 minutes.
  7. Remove from heat and let cool slightly before pureeing with an immersion blender.
  8. Season to taste with additional salt and pepper and serve.
