Ingredients
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
1 ½ cups uncooked farro
2 cups low sodium chicken broth
2 cups grape tomatoes, halved
1 cup frozen spinach, thawed and excess water squeezed out
1 cup sun-dried tomatoes, chopped
½ cup freshly grated Parmesan cheese
Directions
Heat olive oil in a large skillet over medium-high heat.
Add chicken cubes and season with garlic powder, Italian seasoning, salt, and black pepper.
Cook chicken for 6-8 minutes, stirring occasionally, until chicken is cooked through.
Add farro and chicken broth to the skillet and stir to combine. Bring mixture to a boil, then reduce heat to low and cover.
Simmer for 15-20 minutes, stirring occasionally, until farro is cooked and liquid is absorbed.
Stir in tomatoes, spinach, and sun-dried tomatoes. Simmer for an additional 5 minutes, stirring occasionally.
Remove skillet from heat and stir in Parmesan cheese. Serve warm.
