Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ cups uncooked farro
  • 2 cups low sodium chicken broth
  • 2 cups grape tomatoes, halved
  • 1 cup frozen spinach, thawed and excess water squeezed out
  • 1 cup sun-dried tomatoes, chopped
  • ½ cup freshly grated Parmesan cheese

Directions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken cubes and season with garlic powder, Italian seasoning, salt, and black pepper.
  3. Cook chicken for 6-8 minutes, stirring occasionally, until chicken is cooked through.
  4. Add farro and chicken broth to the skillet and stir to combine. Bring mixture to a boil, then reduce heat to low and cover.
  5. Simmer for 15-20 minutes, stirring occasionally, until farro is cooked and liquid is absorbed.
  6. Stir in tomatoes, spinach, and sun-dried tomatoes. Simmer for an additional 5 minutes, stirring occasionally.
  7. Remove skillet from heat and stir in Parmesan cheese. Serve warm.
