Serve this creamy mushroom pasta with a side of garlic bread for a complete meal that the whole family will love.

Ingredients

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound cremini mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley for garnish

Directions

  1. Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5-6 minutes.
  3. Add the chopped onion and minced garlic to the skillet with the mushrooms. Sauté until the onion is translucent, about 3-4 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Cook for 2-3 minutes to reduce the broth slightly.
  5. Stir in the heavy cream, dried thyme, dried oregano, salt, and black pepper. Simmer for 5 minutes to allow the flavors to meld together.
  6. Add the cooked fettuccine pasta to the skillet and toss to coat it with the creamy mushroom sauce. Cook for an additional 2-3 minutes until everything is heated through.
  7. Sprinkle the grated Parmesan cheese over the pasta and mix well.
  8. Serve the creamy mushroom pasta in bowls and garnish with chopped fresh parsley.
  9. Enjoy!
