This cauliflower and cheese casserole is a perfect comfort food dish that combines the creaminess of cheese with the health benefits of cauliflower. It's easy to make and sure to please even the pickiest of eaters.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 cups of shredded cheddar cheese
  • 1 cup of milk
  • 1/4 cup of butter
  • 1/4 cup of all-purpose flour
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of garlic powder
  • 1/2 cup of bread crumbs (optional)

Directions

  1. Preheat the oven to 350°F.
  2. In a large pot, bring water to a boil and cook the cauliflower florets until tender, about 5-7 minutes. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Whisk in the flour until smooth and cook for 1-2 minutes.
  4. Slowly whisk in the milk until the mixture thickens. Add the cheddar cheese, salt, pepper, and garlic powder, stirring until the cheese is melted.
  5. Add the cooked cauliflower to the cheese sauce and mix until well coated.
  6. Transfer the cauliflower mixture to a greased baking dish. Sprinkle bread crumbs on top if desired.
  7. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown on top.
