Ingredients

  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small zucchini, diced
  • 1 small red onion, diced
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Cooking spray or olive oil for pan-frying

Directions

  1. In a large skillet, heat some cooking spray or olive oil over medium heat. Add the diced bell peppers, zucchini, red onion, corn, and black beans. Cook until the vegetables are tender, about 6-8 minutes.
  2. Season the vegetable mixture with chili powder, cumin, paprika, salt, and pepper. Stir well to combine.
  3. Lay out a tortilla and sprinkle half of it with a handful of shredded cheese. Spoon some of the vegetable mixture on top of the cheese, then fold the tortilla in half.
  4. Repeat with the remaining tortillas and filling.
  5. Heat a clean skillet over medium heat and spray with cooking spray or brush with olive oil. Place the quesadillas in the skillet and cook until golden brown and crispy on both sides, about 2-3 minutes per side.
  6. Remove from the skillet and let cool slightly before slicing into wedges. Serve with sour cream, salsa, or guacamole on the side.
