Ingredients
- 2 cups couscous
- 1 cup dried cherries
- 1 tablespoon olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground black pepper
- 2 cups chicken broth
- 1/2 cup slivered almonds
- Salt to taste
Directions
- In a medium-sized saucepan, heat the olive oil over medium heat.
- Add the couscous and stir until lightly toasted, about 3 minutes.
- Add the dried cherries, cinnamon, nutmeg, cardamom, cloves, ginger, and black pepper and stir to combine.
- Add the chicken broth and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
- Add the slivered almonds and simmer for an additional 5 minutes.
- Remove from heat and let stand for 5 minutes.
- Fluff the couscous with a fork and season with salt to taste.
- Serve warm.
