Ingredients

  • 6 medium potatoes, peeled and cut into 1/2 inch cubes
  • 1 cup cottage cheese
  • 1/4 cup chopped onion

Directions

  1. Preheat oven to 350 degrees F.
  2. In a bowl, combine the potatoes, cottage cheese, onion, garlic, olive oil, salt, and pepper. Stir until ingredients are evenly distributed.
  3. Spread the potato mixture in an even layer in a 9x13 inch baking dish.
