Ingredients

  • 1 pound fresh spinach, washed and chopped

  • 12 sheets of phyllo pastry

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onions and sauté until translucent.
  3. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool.
  4. In a large bowl, combine the cooked spinach and onions with the green onions, dill, feta cheese, and beaten eggs. Season with salt and pepper to taste.
  5. Brush a baking dish with melted butter.

  11. Allow the spanakopita to cool for a few minutes before serving. Serve warm or at room temperature.
