Ingredients

  • 1 whole chicken, cut into pieces
  • 6 slices of bacon, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup mushrooms, sliced
  • 2 cups red wine
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste

Directions

  1. In a large Dutch oven, cook the bacon until crisp. Remove and set aside.
  2. Season the chicken pieces with salt and pepper. Brown them in the same pot in batches. Remove and set aside.
  3. In the same pot, sauté the onion and garlic until fragrant. Add the mushrooms and cook until softened.
  4. Return the chicken and bacon to the pot. Pour in the red wine, chicken broth, and tomato paste. Bring to a simmer.
  5. Cover and cook over low heat for about an hour until the chicken is tender.
  6. Remove the chicken pieces and keep warm.
  7. Simmer the sauce until thickened. Stir in the olive oil and butter.
  8. Pour the sauce over the chicken and garnish with fresh parsley before serving.
