Ingredients
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 pound green beans, trimmed and cut into 1-inch pieces
- 1 tablespoon reduced-sodium soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon grated fresh ginger
- 1 teaspoon cornstarch
- 1/4 cup water
- 1/4 cup chopped peanuts or cashews
Directions
- Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until the onion is softened, about 3 minutes.
- Add the green beans and cook, stirring, until they are just tender, about 5 minutes.
- In a small bowl, combine the soy sauce, hoisin sauce, ginger, cornstarch, and water and stir until blended. Pour the mixture over the green beans and stir until blended.
- Cook, stirring, until the sauce thickens, about 2 minutes. Remove from heat and stir in the peanuts or cashews.
- Serve hot.
