Heat the olive oil in a large pan over a medium heat and add the chicken thighs. Cook for 5 minutes, stirring occasionally, until the chicken is lightly browned.
Add the onion, garlic, peppers and courgette to the pan and cook for a further 5 minutes, stirring occasionally.
Add the oregano, basil, thyme and paprika to the pan and stir to combine.
Pour in the white wine and chicken stock and bring to the boil. Reduce the heat and simmer for 15 minutes, stirring occasionally.
Season with salt and pepper and serve. Enjoy!
