Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 cup frozen mixed vegetables
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the chicken and cook until golden brown and cooked through, about 8 minutes.
  3. Add the frozen vegetables and cook for 5 minutes.
  4. Add the chicken broth and bring to a boil, then reduce the heat to low and simmer for 10 minutes.
  5. Stir in the heavy cream and season with salt and pepper to taste. Simmer for another 5 minutes.
  6. Serve hot.
