Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups penne pasta, cooked
  • 1/4 cup grated Parmesan cheese

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5 minutes.
  2. Add the onion and garlic and cook for another 2 minutes.
  3. Add the chicken broth, cream, mozzarella, cheddar, Italian seasoning, salt, and pepper. Stir to combine.
  4. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  5. Add the cooked penne pasta and mix until the pasta is coated in the sauce.
  6. Garnish with the grated Parmesan cheese and serve with garlic bread.
