Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan.
  2. In a large bowl, stir together the almond flour, baking soda, and salt.
  3. In a separate bowl, mix together the mashed bananas, coconut oil, honey, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until combined. Stir in the walnuts, if using.
  5. Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
