- 2 cups almond flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 ripe bananas, mashed
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan.
- In a large bowl, stir together the almond flour, baking soda, and salt.
- In a separate bowl, mix together the mashed bananas, coconut oil, honey, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until combined. Stir in the walnuts, if using.
- Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
