Ingredients

  • 1 (14-ounce) can sweetened condensed milk
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 3 (8-ounce) packages cream cheese, softened
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 2 large eggs
  • 2 tablespoons pumpkin puree
  • Whipped cream (optional)
  • Halloween sprinkles (optional)

Directions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, mix together graham cracker crumbs and melted butter until evenly combined.
  3. Press mixture into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then set aside to cool.
  5. In a large bowl, beat cream cheese until light and fluffy.
  6. Add sugar, flour, vanilla, and pumpkin pie spice. Beat until combined.
  7. Add eggs, one at a time, beating until just combined.
  8. Stir in pumpkin puree until fully incorporated.
  9. Pour filling into prepared springform pan.
  10. Bake for 55 minutes, or until center is just set.
  11. Allow to cool completely before serving.
  12. Garnish with whipped cream and Halloween sprinkles, if desired.
