Ingredients
- 2 egg whites
- ¼ teaspoon cream of tartar
- ¼ teaspoon vanilla extract
- ½ cup granulated sugar
- ¼ teaspoon peppermint extract
- 2 tablespoons finely chopped fresh mint leaves
- ½ cup semi-sweet chocolate chips
Directions
- Preheat oven to 300°F (150°C). Line baking sheet with parchment paper.
- In a large bowl, beat egg whites until foamy. Add cream of tartar and beat until soft peaks form. Slowly add sugar, one tablespoon at a time, beating until stiff peaks form. Add vanilla extract and peppermint extract and mix until combined.
- Fold in chopped mint leaves and chocolate chips. Drop by teaspoonful onto baking sheet, spacing them at least an inch apart. Bake for 25 minutes or until lightly golden brown.
- Remove from oven and let cool completely before serving.
