Ingredients
- 4 cups cooked chicken, shredded
- 1 cup frozen peas and carrots
- 1 cup frozen corn
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 can (16 oz) refrigerated biscuits
Directions
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the diced onions and celery, and sauté until they are soft and translucent.
- Sprinkle the flour over the vegetables and butter, stirring constantly to form a roux. Cook for 1-2 minutes to get rid of the raw flour taste.
- Slowly whisk in the chicken broth and milk, making sure to break up any clumps of flour. Stir in the salt, black pepper, dried thyme, dried parsley, garlic powder, onion powder, and paprika. Cook the mixture until it thickens and comes to a simmer.
- Add the shredded chicken, frozen peas and carrots, and frozen corn to the sauce. Stir well to combine.
- Transfer the mixture to a 9x13-inch baking dish, spreading it evenly.
- Open the can of refrigerated biscuits and cut each biscuit into quarters. Arrange the biscuit quarters on top of the chicken mixture in a single layer.
- Bake in the preheated oven for 25-30 minutes or until the biscuits are golden brown and the filling is bubbling around the edges.
- Remove from the oven and let it cool for a few minutes before serving. Enjoy!
