Ingredients
- 6 ripe peaches
- 1 cup water
- 1 cup granulated sugar
- 1/2 cup bourbon
- 1 cinnamon stick
- 1 vanilla bean, split
- 1 teaspoon lemon zest

Directions
- Peel the peaches by making a small 'X' on the bottom of each peach. Place them in a pot of boiling water for about 30 seconds, then transfer them to an ice bath. The skins should easily peel off. Cut the peaches in half and remove the pits.
- In a saucepan, combine the water, sugar, bourbon, cinnamon stick, vanilla bean, and lemon zest. Bring to a boil over medium heat, stirring until the sugar has dissolved. Reduce the heat and simmer for 5 minutes to infuse the flavors.
- Place the peach halves in a large glass jar or container. Pour the syrup over the peaches, making sure they are fully submerged. Cover the container and refrigerate for at least 8 hours or overnight to allow the peaches to absorb the flavors.
