  • Salt and pepper, to taste
  • 6 corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat.

  5. In a greased 9x13-inch baking dish, layer half of the tortilla quarters on the bottom. Spoon half of the beef mixture over the tortillas.
  6. Sprinkle half of the cheddar and Monterey Jack cheeses over the beef mixture. Repeat the layers with the remaining tortilla quarters, beef mixture, and cheeses.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
