Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 package (20 ounces) frozen cheese tortellini
  • 2 cups baby spinach
  • Salt and black pepper, to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil, for garnish

Directions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Remove the sausage from the pot and drain excess grease, leaving about 1 tablespoon.
  2. In the same pot, add the diced onion and minced garlic. Saute until the onion is translucent and the garlic is fragrant.
  3. Pour in the chicken broth and diced tomatoes (with their juices). Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  4. Add the cooked sausage back into the pot, along with the heavy cream. Stir well to combine.
  5. Add the frozen cheese tortellini to the pot and cook according to package instructions, usually about 5-7 minutes.
  6. Once the tortellini is cooked, stir in the baby spinach. Cook for an additional 2-3 minutes until the spinach wilts.
  7. Season the soup with salt and black pepper, to taste.
  8. Serve the soup hot, topped with grated Parmesan cheese and fresh basil for garnish.
