Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground allspice
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth
  • 4 cups diced tomatoes
  • 1 cup frozen corn
  • 1 cup frozen lima beans
  • 2 pounds fresh fish fillets, cut into cubes
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, allspice, oregano, smoked paprika, cayenne, salt, and black pepper. Stir to combine and cook for 1 minute.
  3. Add the vegetable broth, tomatoes, corn, and lima beans. Bring to a boil, reduce heat to low, and simmer for 15 minutes.
  4. Add the fish and simmer for 10 minutes, or until the fish is cooked through.
  5. Garnish with fresh cilantro and serve.
