Ingredients

  • 2 cups cooked sushi rice
  • 1/2 cucumber, diced
  • 1/2 avocado, diced
  • 1/2 cup cooked edamame
  • 1/4 cup pickled ginger
  • 1/4 cup toasted sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil

Directions

  1. In a large bowl, combine the cooked sushi rice, cucumber, avocado, edamame, pickled ginger, and sesame seeds. Toss to combine.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, honey, and sesame oil. Pour the mixture over the salad and toss to combine.
  3. Divide the salad among four plates and serve.
