Ingredients

  • 1/2 cup (120ml) white wine vinegar
  • 2 tablespoons (30ml) freshly squeezed lemon juice
  • 2 tablespoons (30ml) chopped fresh tarragon leaves
  • 2 tablespoons (30ml) chopped fresh chervil leaves
  • 2 tablespoons (30ml) chopped fresh chives
  • 4 egg yolks
  • 1/2 cup (120ml) melted unsalted butter
  • Salt and pepper to taste

Directions

  1. In a blender, combine the vinegar, lemon juice, tarragon, chervil, and chives and blend until smooth.
  2. Add the egg yolks and blend until combined.
  3. Slowly add the melted butter while blending until the sauce is thick and creamy.
  4. Season with salt and pepper to taste.
  5. Serve over steak or other grilled meats.
