Ingredients

  • 2 tablespoons of olive oil
  • 1/2 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of cayenne pepper
  • 1/4 teaspoon of turmeric
  • 2 tablespoons of butter
  • 2 cups of cooked ramen noodles
  • 6 eggs
  • 1/2 cup of shredded cheese (optional)

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring often, until the onion is soft and translucent, about 5 minutes.
  3. Add the salt, pepper, paprika, cayenne pepper, and turmeric and cook, stirring, for 1 minute.
  4. Add the butter and cook until melted. Add the cooked ramen noodles and stir until well combined.
  5. In a medium bowl, whisk together the eggs until light and fluffy. Add the egg mixture to the skillet and cook, stirring often, until the eggs are almost set, about 5 minutes.
  6. Sprinkle the top with the shredded cheese (if using), and transfer to the preheated oven. Bake for 10-15 minutes, or until the eggs are set and lightly browned. Serve warm.
