Ingredients

  • 1/2 cup navy beans
  • 1/2 cup red kidney beans
  • 1/2 cup garbanzo beans
  • 1/2 cup black beans
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 lemon, juiced

Directions

  1. In a large pot, combine all of the beans and cover with water. Bring to a boil and cook for 10 minutes.
  2. Add the onion, bell pepper, parsley, garlic, olive oil, smoked paprika, cumin, oregano, chili powder, salt and pepper. Simmer for 15 minutes.
  3. Stir in the lemon juice and simmer for an additional 5 minutes.
  4. Serve hot and enjoy!
