Ingredients
- 2 Roma tomatoes, chopped
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 baguette, cut into 1/2-inch slices
- 1/2 cup mozzarella cheese, shredded
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine the tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well and set aside.
- Place the baguette slices on a baking sheet. Bake for 10 minutes, or until lightly toasted.
- Remove from oven and top each slice with a spoonful of the tomato mixture. Sprinkle with mozzarella cheese.
- Bake for an additional 5 minutes, or until cheese is melted and bubbly.
- Serve warm.
