Belgioioso Cheese Eggplant Lasagna

Ingredients

  • 1 large eggplant, sliced
  • 1 package Belgioioso shredded Italian cheese blend
  • 1/2 cup butter
  • 1/3 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Romano cheese
  • 1/4 cup chopped fresh parsley
  • 1 package lasagna noodles, cooked

Directions

  1. Preheat oven to 350 degrees F.
  2. Place eggplant slices in a single layer on a baking sheet and bake for 10 minutes.
  3. In a large saucepan, melt the butter and add the flour. Stir and cook for 2 minutes.
  4. Add the garlic powder, salt, and pepper and stir to combine.
  5. Slowly add the milk and stir until the sauce thickens and starts to bubble.
  6. Add the Parmesan and Romano cheeses and stir until melted.
  7. Stir in the parsley.
  8. In a 9x13 inch baking dish, spread 1/3 of the cheese sauce over the bottom.
  9. Layer half of the eggplant slices over the cheese sauce.
  10. Top with 1/2 of the remaining cheese sauce.
  11. Layer the remaining eggplant slices over the cheese sauce.
  12. Top with the remaining cheese sauce.
  13. Sprinkle the shredded Belgioioso cheese over the top.
  14. Cover with foil and bake for 45 minutes.
  15. Remove the foil and bake for an additional 10 minutes.
  16. Let cool for 10 minutes before serving.
