Ingredients

  • 2 cups long-grain rice
  • 1/4 cup vegetable oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, finely chopped
  • 1 carrot, finely chopped
  • 1 cup frozen peas
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste

Directions

  1. Rinse the rice with cold water until the water runs clear. Drain well.
  2. In a large skillet or pan, heat the vegetable oil over medium heat.
  3. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent and the garlic is fragrant.
  4. Add the red bell pepper, carrot, and frozen peas to the skillet. Cook for 5 minutes or until the vegetables are slightly softened.
  5. Add the drained rice to the skillet and stir to coat it with the vegetables and oil.
  6. In a separate saucepan, bring the chicken broth to a boil. Add the cumin, turmeric, salt, and pepper to the broth.
  7. Pour the seasoned chicken broth over the rice in the skillet. Stir briefly to combine all the ingredients.
  8. Cover the skillet with a tight-fitting lid and reduce the heat to low. Simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  9. Remove the skillet from heat and let it sit, covered, for 5 minutes.
  10. Fluff the rice with a fork before serving. Garnish with chopped cilantro, if desired.
  11. Serve the Guatemalan rice hot as a side dish with your favorite main course.
