Ingredients
1 cup of cooked black beans
1/2 cup of crumbled queso fresco cheese
1/4 cup of diced tomatoes

Directions

Once the oil is hot, place a mini flour tortilla in the skillet and cook for 1 minute on each side.
Carefully remove the mini tortilla from the skillet and place it on a paper towel-lined plate.
Repeat the cooking process with the remaining mini tortillas.
Fill each mini tortilla with the bean mixture and serve immediately.
