Ingredients

  • 1 cup of cooked black beans
  • 1/2 cup of crumbled queso fresco cheese
  • 1/4 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • 1/4 cup of diced onion
  • 1/4 cup of chopped jalapenos
  • 1/4 cup of vegetable oil
  • 24 mini flour tortillas

Directions

  1. In a bowl, combine the cooked black beans, crumbled queso fresco cheese, diced tomatoes, chopped cilantro, diced onion, and chopped jalapenos.
  2. Heat the vegetable oil in a skillet over medium-high heat.
  3. Once the oil is hot, place a mini flour tortilla in the skillet and cook for 1 minute on each side.
  4. Carefully remove the mini tortilla from the skillet and place it on a paper towel-lined plate.
  5. Repeat the cooking process with the remaining mini tortillas.
  6. Fill each mini tortilla with the bean mixture and serve immediately.
