Ingredients

  • 1 lb ground pork
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 2 tbsp Thai red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 cup diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup chopped cilantro
  • 8 large lettuce leaves (butter lettuce or iceberg lettuce)
  • Sliced red chili, for garnish

Directions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the onions, garlic, and red bell pepper and cook until softened, about 4-5 minutes.
  2. Add the ground pork to the skillet and cook until browned and cooked through, breaking it up into small pieces with a spatula.
  3. Stir in the Thai red curry paste, fish sauce, soy sauce, and brown sugar. Cook for another 2 minutes to allow the flavors to meld together.
  4. Add the diced tomatoes and chicken broth to the skillet and bring to a simmer. Cook for 10-15 minutes, until the sauce has thickened slightly.
  5. Remove the skillet from heat and stir in the chopped cilantro.
  6. To serve, spoon the pork mixture into lettuce leaves, garnish with sliced red chili, and roll up like a taco.
