Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (15 ounce) cans white beans, drained and rinsed
  • 3 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion, bell pepper, and garlic and cook, stirring often, until the vegetables are soft, about 5 minutes.
  3. Add the ground turkey and cook, breaking it up with a spoon, until it is no longer pink, about 5 minutes.
  4. Stir in the cumin, chili powder, oregano, salt, and pepper and cook for 1 minute.
  5. Add the beans, chicken broth, and tomatoes and bring to a boil.
  6. Reduce the heat to low and simmer for 15-20 minutes, or until the chili has thickened.
  7. Stir in the cilantro and season with salt and pepper to taste.
